Dinner at Eight- That’s Amore!

Blessed Pinterest for sharing so many great ideas! I always see something that looks awesome that sparks a date night. I absolutely love finding other’s ideas on creative dating too!
I was intrigued by a pin I saw linking to the blog “A Bit of Sunshine” by Rebekah Gogh. She is an amazing photographer which is something that draws me into blogs instantly! She and her friend cooked up this idea for date nights at home called “Dinner at Eight.” Basically they have young children they have a hard time leaving or affording to leave, and decided to get crafty and have a dinner at home after putting children to bed extra early. About every other month they give a theme, February being “Sweetheart.” My heart melted looking at so much amazing food, cooking, and dating. We’re talking like all favorite things in one! Jacob and I decided to jump aboard since cooking at home is always a great date for us!

Since we had big plans for Saturday and the month is drawing to close quickly, we decided to have a spontaneous date Friday and buy some fresh ingredients for a romantic pasta dinner at home.

We had a really good time using our Kitchen aid attachment to roll out some home made spinach noodles. After that we just used a pizza cutter to make thick noodles from the sheets rolled. *Don’t fret if you don’t have a noodle roller, it’s not hard to do it with a rolling pin!

But it was surprisingly easy, didn’t take too long, and we really had a lot of fun making this dish together!

Here’s the recipe if you’re looking to try some spinach pasta at home:  
 
  • 1 (10 ounce) package frozen chopped spinach, thawed and squeezed dry
  • 1 tsp water
  • t TBSP Olive oil
  • 2 eggs
  • 2 cups all-purpose flour
Blend spinach, water, olive oil, and eggs in a blender. Add to your mixer and combine with flour. Roll into thin sheets and cut with a pizza cutter. Bring a pot of water to a boil and cook 3-6 minutes. Serve immediately with warm sauce and chicken.

 

We just added Trader Joe’s Alfredo sauce and some chicken marinaded in Montreal chicken seasoning grilled on our George Foreman. It worked well!

 And adding a fancy drink always seems to help with dinner! We don’t do alcohol, but we do enjoy Italian soda- particularly with an Italian dish- now that’s amore!

And after we enjoyed this goodness, we spent some time making our new favorite dessert- salty/sweet pretzel chocolate chip cookies. Oh they are to die for!

  2. Ha ha ha, oh no, we just may have to recreate this one and get the soda part right! I wondered why it wasn't our favorite “Italian Soda” it totally had a different taste! Too funny!
